Farmer Feature: Pedrozo Dairy and Cheese Co.

There are few things in this world greater than cheese, but local cheese from 100% grass-fed cows is definitely one of them! Pedrozo Dairy and Cheese Co. is a family owned and operated farm in Orland, making cheese there since 1999. Owners and farmers Tim and Jill have a long history with cheese making – Tim is a third generation dairy farmer. Their son Tom runs the market stand and has been making cheese himself for 5 years!

 

Pedrozo makes all raw milk cheese, offering a variety of beautiful, handcrafted cheese available in limited quantities. Their original flagship cheese is Northern Gold – a semi-firm cow’s milk table cheese that is buttery, smooth, nutty, and delicious. It is aged at least one year, and is now offered in several flavor variations, including truffle, sweet Italian red pepper, and garlic and herb. They also offer Black Butte Reserve (a hard and sharp cheese aged six months and made only in the spring), as well as a cow’s milk feta barrel aged in brine.

This Saturday from 11am to 3pm you can come out to the farm for a socially distanced open house to celebrate raw milk appreciation day! See the farm, chat with the family, snack on a grilled cheese sandwich, and buy cheese on sale right out of the aging room!
