Tomatoes. Are. BACK! It is my humble opinion that the Chico Certified Farmer’s Market has the best tomatoes, only potentially topped by those grown in Italy. Heirlooms have made their appearance first, and what an entrance they make. Large and unique in shape, robed in shades of red, gold, green, and yellow. History and Nutrition

 

Tomatoes are one of the most versatile and beloved ingredients in the culinary world. Originating from South America, they were first cultivated by the Aztecs and Incas around 700 AD. When tomatoes were introduced to Europe in the 16th century, they were initially met with suspicion. They were thought to be poisonous due to their relation to the deadly nightshade family. However, it wasn’t long before their culinary potential was recognized, and they became a staple in various cuisines across the globe.

Rich in vitamins C and K, potassium, and folate, tomatoes are not only delicious, they also pack a mean nutritional punch. They are renowned for their high levels of lycopene, a powerful antioxidant linked to numerous health benefits, including a reduced risk of heart disease and cancer (the Food and Drug Administration has not evaluated this statement). Whether consumed fresh, cooked, or processed, tomatoes retain their nutritional value, making them an essential part of a healthy diet. Their vibrant red color and juicy texture make them a favorite in salads, sauces, soups, and countless other dishes.

Enjoy these tomato-centric dishes, perfect for showcasing the delicious versatility of tomatoes!

Classic Tomato Basil Soup

Ingredients:

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until soft.
  2. Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in basil leaves, salt, and pepper. Use an immersion blender to puree the soup until smooth.
  4. Stir in heavy cream, if using, and adjust the seasoning. Serve hot.

Caprese Salad

Ingredients:

  • 4 large ripe tomatoes, sliced
  • 1 lb fresh mozzarella cheese, sliced
  • 1 bunch fresh basil leaves
  • 3 tbsp extra-virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions:

  1. Arrange tomato and mozzarella slices on a platter, alternating and overlapping slightly.
  2. Tuck whole basil leaves between the slices.
  3. Drizzle with olive oil and balsamic vinegar.
  4. Season with salt and pepper. Serve immediately.

Ingredients:

  • 6 ripe tomatoes, diced

  • 3 tbsp extra-virgin olive oil
  • Salt and pepper to taste
  • 1 baguette, sliced and toasted

Instructions:

  1. In a bowl, combine tomatoes, basil, garlic, balsamic vinegar, olive oil, salt, and pepper. Let sit for 10 minutes.
  2. Spoon the tomato mixture onto toasted baguette slices.
  3. Serve immediately as an appetizer or snack.

Spaghetti with Fresh Tomato Sauce

Ingredients:

  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 6 large tomatoes, chopped
  • 1/2 tsp red pepper flakes (optional)
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 12 oz spaghetti
  • Grated Parmesan cheese for serving

Instructions:

  1. Cook spaghetti according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant.
  3. Add chopped tomatoes and red pepper flakes. Cook until tomatoes break down into a sauce, about 10-15 minutes.
  4. Stir in basil, salt, and pepper. Add cooked spaghetti to the skillet and toss to coat.
  5. Serve with grated Parmesan cheese.

Fresh Tomato Salsa (Pico de Gallo)

Ingredients:

  • 4 ripe tomatoes, diced
  • 1/2 medium red onion, finely chopped
  • 1-2 jalapeño peppers, seeded and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon ground cumin for extra flavor

Instructions:

  1. In a medium bowl, combine the diced tomatoes, red onion, jalapeños, cilantro, and garlic.
  2. Squeeze the lime juice over the mixture and stir to combine.
  3. Season with salt and pepper to taste. If using, add the ground cumin and mix well.
  4. Let the salsa sit for at least 15 minutes to allow the flavors to meld together.
  5. Serve with tortilla chips or as a topping for tacos, grilled meats, or salads.

Tips:

  1. For a milder salsa, remove the seeds and membranes from the jalapeños before chopping.
  2. For a spicier salsa, add more jalapeños or include some of the seeds.
