Vendor Feature: Alldrin & Sons Alaska Salmon
Alldrin and Sons have been providing Chico with wild Alaskan sockeye salmon for at least 15 years. The father-and-son business started in the 80s when owner Lance Alldrin took a trip up to Soldotna, Alaska for a job at a Bible Camp, only to discover a love of net fishing for salmon. A number of years later, he rediscovered his passion and started a business. He and his sons travel to Alaska every summer to fish, and then ship home their catch filleted and flash frozen to be sold at market. They sell both ready-to-cook fillets, as well as smoked fillets ready to eat from September through the end of May.

Salmon ROCKS!! It is incredibly flavorful, easy to cook, and super good for you. Salmon is loaded with Omega-3 fatty acids, which are proven to help reduce the risk of heart disease. Salmon also has high percentages of potassium, magnesium, and vitamins B-6 and B-12, not to mention it’s a great source of protein!

Simply Chico Grilled Salmon
- Fillet(s) Wild Alaskan Sockeye Salmon (# depends on how much you want to cook)
- Olive Oil (from Isern and Sons or Kaki Farms)
- Chico Spice Co. Fish Spice
- Salt
- Place your fillets in tinfoil. Make a little boat for the fillet so the olive oil won’t seep out, and you can cover the top.
- Drizzle amply with olive oil.
- Shake a generous amount of fish spice onto the fillets (make sure to cover the whole thing!)
- Set oven to “Broil”
- Seal the fillets with the foil, and broil for approximately 10-15 minutes. May need more time if the fillet is particularly large. You can check if they’re done by gently scraping the flesh with a fork. If the meat flakes easily, it’s ready!
- Remove from oven, unwrap, sprinkle with salt, and serve.
- Dress the salmon with olive oil and fish seasoning, and seal in tinfoil.
- Grill on low/medium heat for 10-15 minutes or until the meat flakes away easily with a fork.
- Remove from heat, sprinkle with salt, and serve!
I cook salmon in this fashion regularly, and I never get tired of it. I’ll typically serve it with steamed green beans, broccoli, or asparagus, and a scoop of brown rice. Give it a go!
